Healthy Stuffing: Bagel Bread Edition!

OK, let me just say that you guys are going to FREAK OUT over this Healthy Stuffing recipe, I love it so much. I used my Bagel Bread Recipe, which is by far one of the most favorite recipes on my website. Thus, I figured, how could I not make a super yummy stuffing out of it this Thanksgiving?!

Healthy Stuffing Specifics

This bagel bread stuffing is decadent, delicious and PACKED full with delicious flavors and veggies of course. Here’s a breakdown:

  • Bagel Bread: This is your first step in the healthy stuffing recipe. I made two batches of the Bagel Bread for this stuffing, but feel free to half the recipe if you’re cooking for a smaller group. The key to get the stuffing crispy is to toast the bagel bread pieces after baking, but it’s not necessary if you like it a little bit more on the moist side!PurelyPope Healthy Bagel Bread Stuffing
  • Veggie Broth: You’re more than welcome to use a chicken or turkey broth if you prefer as well, but the quantity of it can vary. I based this recipe off of 1 cup of veggie broth, but if you prefer a more moist stuffing, add more as you see fit! I always snag the organic, low sodium version as well.
  • Veggies: For the veggies in this healthy stuffing, I went with the crowd favorites of white onion, celery and carrots but also switched it up a bit with Shiitake Mushrooms! They add a more dense flavor which I love.
  • Season It!: For the seasoning, I used the Trader Joe’s Vegan Chicken-Less seasoning, but any Poultry Seasoning will do. This is where a bulk of the flavor is coming from, along with the fresh parsley and sage (which are optional!)

Healthy Bagel Bread Stuffing

Ingredients

  • 2 batches PurelyPope Bagel Bread (Recipe linked above)
  • 3-4 c shiitake mushrooms, sliced
  • 2 ribs celery, diced
  • 1 c carrots, diced
  • 1 sweet onion, diced
  • 1 c low sodium veggie broth (more if you like the stuffing soggier)
  • 2 tbsp vegan butter or ghee
  • 4 tbsp poultry seasoning
  • 2 tsp garlic, minced
  • 1 tbsp fresh flat leaf parsley, chopped
  • 1 tbsp fresh sage, chopped (optional)

Instructions

Bagel Bread Stuffing!

  1. Bake 2 batches of bagel bread per directions.
  2. While bagel bread is baking, add butter, veggies and veggie broth to a large pan on medium/low heat and cover for about 10 minutes or until veggies are cooked down/through.
  3. After about 10 minutes, mix and stir veggies, add in all spices and garlic and then cover again for about 5 minutes, then turn off heat.
  4. After bagel bread is cooked, dice into 1 inch cubes and toast either in an air fryer or on a pan in the oven under broil.
  5. Once bagel bread is toasted, mix the bagel bread pieces with the veggies in a large bowl.
  6. Spray a baking dish with avocado oil spray. Place the stuffing in a baking dish and bake at 350 for 20 minutes.
  7. Top with fresh parsley & sage and enjoy!
